My first delivery AND furlough friday

i've joined Farm Fresh to You. they deliver organic, hand-picked fresh fruits & veggies to your door. i chose twice a month. here's my first order:



Eggplant??? What the hell do i do with eggplant? and what are those yellowish peppers?

UPDATE:

Nice FF. had a massage and then laid by the pool fora few hours. off to make eggplant parm!

eggplant is sooo yummy and buttery if done right. grill it with olive oil. or my favorite, if done right again, is eggplant parmasan. I can bring you a recipe tonight if ya like? responding to me to you won't hurt you.

i found a Suzanne Somers recipe for E. Parm. that i'm going to try....all her food is pretty amazing.

but the grilled thing sounds good too.

Yep, grill the eggplant. The yellow pepper could be cut up and put in a salad or put them in a stirfry with the cabbage? Gawd, that all looks so good!

lets see what can we make here? make a little cherry vinagrette wih about 4 or 5 of those cherries and use that on your salad...the peppers are called -banana peppers- not hot but not totally sweet either...roast them- chop them up and use them in a salsa with one tomatoand some onion with the other tomato make a caprese salad. Easy eggplant - put the whole thing in the oven and roast until soft - let cool and scoop out all the flesh and chop up with a little garlic, salt, pepper, olive oil and you have a basic dip or baba ganoush....need more ideas?

use the cherry vinagrette on some cole slaw with that cabbage - fresh and tasty...
